A little about us & our sauces

So, let's be real. Your average hot sauce is fine. It gets the job done. But if you’ve ever tasted something that’s not just hot, but also complex, tangy, and downright addictive, you know there’s a better way. At Maplefern Kitchen, we're all about that better way, and it's called fermentation.

We're Clayton and Sally, a couple who've happily planted our roots here in Perth, Western Australia, well Mandurah to be more exact. We've got a bit of a blended family story ourselves: Canadian - Maple (that's me, Clayton!) and New Zealand - Fern (that's Sally!). With our three little (not so little) ones running around, we're building this family business to share a genuine love for incredible food and, more importantly, incredible flavour.

My journey to making what we think are the best hot sauces on the planet started with a 28-year career as a chef working around the world. Like most people, I was just trying to make a killer chicken wing sauce. But after years of tinkering, I realized the secret wasn’t just in the chillies—it was in the process. Fermenting the peppers was the key to unlocking that deep, soulful flavour I was missing. It adds a tanginess and richness you just can’t
get from a simple vinegar-based sauce. That's why we're so proud of our first creation, Sassy Sally's Red Hot, and it's why every sauce we make follows this same method.

We're starting things off with a focus on flavour over just pure fire. Our sauces are approachable, but have range. Cheeky Charley’s being quite mild but packs a flavour punch you can put on almost anything, to Sassy Sally’s coming in at a nice medium which is definately moreish, and finally Tropical Habanero which might come in touching the “Hot” range for most. So, whether you're new to the spice game or a seasoned pro, you’ll find something to love. But for the true heat-seekers out there, don't you worry. We have some seriously spicy creations in the pipeline that are going to light you up.
